Close your eyes and bring your nose closer to the glass. You don't have to be a super expert to grasp the finesse and delicacy of this bouquet. Aficionados' minds immediately fly across the border to France. In areas famous for the production of white wines. Like Burgundy, where Chardonnay was born and where the natural environment allows it to express itself at the highest level. In this case, however, France has nothing to do with it. It is indeed a Chardonnay, but from a very different region. It is proposed by Paolo and Noemia d'Amico. And it comes from Lazio. The vineyards, in fact, are located between Rome and Florence, on the border with Umbria, at an altitude of about 450 metres above sea level. Super careful vinification, with temperature control and ageing in stainless steel tanks for about 8 months. Then bottling and a further 3 months' rest in the cellar. Sounds simple. But in reality, it really isn't. But this is how we obtain the white wine of great personality and freshness that is labelled Calanchi di Vaiano. Luminous yellow with reflections tending towards green, the nose reveals an elegant combination of scents, with hints of citrus, apricot, white pepper and yellow flowers. In the mouth it is gritty. Floral and mineral at the same time, it offers a very long persistence. Good today, it is a white that also holds up well to the passage of time. Suitable for long ageing, on the table it goes well with risotto, seafood, fish and white meat. Santé!
